- Grow cold-tolerant leafy vegetables like lettuce, spinach, and collards. There can be frost kill, so use a cold frame if you want a reliable supply. Sow seeds weekly for a constant harvest. Add some winter cheer by planting with pansies.
- Mulch strawberry beds for winter protection. Use a layer of wheat straw or pine needles 2–3 inches thick. Pull the mulch back when blooms appear.
- Research new varieties.
